Loaded Breakfast Cookie

As mentioned in my last post I made breakfast cookies. I really want to share this amazing recipe with you. Cookies. For breakfast. The little kid in me is feeling rebellious. 🙂

I almost never follow a recipe exactly. Except bread, and then I still mess it up :p
The addition of chocolate chips was a given. Then, at the last minute I decided to throw in a banana. That’s kind of my thing. Ever since someone I used to work with told me she puts banana in her cookies, I have done the same. Jamin isn’t a huge fan of this, but that’s what the chocolate is for 😉

Now, on to the recipe.

2 cups oats
1/2 cup whole wheat flour
1/2 cup brown sugar
3/4 cup plain greek yogurt
1/4 cup olive oil (can use applesauce)
1 egg
1/2 t salt
1/2 t baking soda
2 t vanilla
1 cup dried cranberries
1 cup chocolate chips
1 mashed banana

Mix all ingredients together. Drop 2 tablespoons at a time onto a prepared cookie sheet. Mash cookies down if you wish, because they do not spread. Then, bake for 10 mins at 375 degrees F.

Once out of the oven, try really hard to save some for breakfast, and then just eat a bunch anyways. 🙂
