Yesterday I made some coconut milk. I’ve been putting it off because I thought it would be hard. But, it’s not! Just blend, strain, done.

I got my instructions from Girl Meets Nourishment.

I put 3-1/2 cups of hot water and 2 cups of shredded (unsweetened) coconut into my blender.
You’re supposed to blend for 5 minutes, but I felt like it was blended enough at 3.
Then, let the coconut mixture set for 15 minutes.

Place a strainer lined with cheesecloth over a bowl (In my case, a stockpot). Pour the milk mixture into the strainer to filter out the coconut. Let this set for 30 minutes.

Once most of it has drained on it’s own, squeeze the rest of the liquid out. Try to get out as much liquid as possible. I got a little over 20oz of milk.

Don’t throw away the leftover coconut! Now you can dehydrate the coconut and use a coffee grinder to make it into coconut flour. Two birds, one stone. 😛
I had some of this coconut milk in my coffee this morning and it was fabulous. Creamy and

coco-nutty.

I caught a rainbow when taking Ada out. 🙂
