I think it’s time for a new post. I’ve been slacking.

I found this recipe through Supercook.com. Supercook is a go-to site for me when I need to use up food but don’t know how to put them together.

The name makes this recipe sound involved. It’s not necessarily a quick lunch. But, it’s really easy.

Original Recipe

Ingredients:
6 eggs
1 (5 ounce) can tuna

1/4 onion, small finely diced
3 tablespoons mayonnaise
1 teaspoon dijon mustard                                                  
1/4 teaspoon salt
1/8 teaspoon pepper
Paprika                            

Instructions:

1) First boil 6 eggs. Bring a large pot of water to boil. Then, carefully place the eggs into the boiling water. Once the water starts boiling again set a timer for 8 minutes. When the eggs are done, empty the water from the pot. Crack the shells a little and let them set in cold water.

2) While your eggs are boiling, mix together the remaining ingredients.

3) When the eggs are cooled, peel and then slice them in half. Remove the yolk. (The original recipe says to discard, but I save them as something for Elena and Vera to snack on)
Scoop about a tablespoon of tuna salad into each egg half.

4) It didn’t seem right to leave off paprika. I mean, these are deviled eggs… So, sprinkle some paprika over the tuna. Serve with tomato and lettuce. Yum!
